If a dish could make you fall in love at first bite, it would be Marry Me Chicken Pasta! This ultra-creamy recipe combines golden seared chicken, a rich garlic and sun-dried tomato sauce, and perfectly cooked pasta for an irresistible meal.
Ingredients (for 2-3 servings)
- 2 chicken breasts
- 200 g (7 oz) pasta (penne, tagliatelle, or linguine)
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- 2 garlic cloves, minced
- 100 ml (½ cup) chicken broth
- 150 ml (⅔ cup) heavy cream
- 50 g (½ cup) grated Parmesan cheese
- 5-6 sun-dried tomatoes, chopped
- 1 tsp red pepper flakes (optional)
- 1 tsp dried oregano
- Fresh basil leaves for garnish
Instructions
1️⃣ Cook the Pasta
Boil the pasta in a large pot of salted water according to package instructions. Drain and reserve a bit of pasta water.
2️⃣ Sear the Chicken
Heat olive oil in a skillet over medium heat. Season the chicken breasts with paprika, salt, and pepper, then sear them for about 5 minutes per side until golden and cooked through. Remove from the pan, let them rest, and slice them.
3️⃣ Prepare the Creamy Sauce
In the same skillet, add the minced garlic and cook for about 30 seconds. Pour in the chicken broth, scraping up the browned bits from the pan. Add the sun-dried tomatoes, oregano, and red pepper flakes. Let it simmer for 2 minutes.
4️⃣ Make it Creamy
Lower the heat and stir in the heavy cream and Parmesan cheese. Mix well until the sauce is smooth and slightly thickened.
5️⃣ Combine Everything
Add the cooked pasta to the sauce, tossing to coat. If the sauce is too thick, add a splash of reserved pasta water. Add the sliced chicken back to the pan and let everything heat together for 2 minutes.
6️⃣ Serve and Enjoy!
Plate the pasta, garnish with fresh basil, and serve immediately. Enjoy your delicious Marry Me Chicken Pasta—who knows, it might just make someone say “Marry Me!”
