Ground Beef Enchiladas: A Flavorful Tex-Mex Favorite ????

These Ground Beef Enchiladas are filled with seasoned ground beef, cheese, and rolled into soft tortillas, then smothered with a savory enchilada sauce and baked to perfection. Perfect for dinner or a family gathering, they’re guaranteed to be a crowd-pleaser!

Ingredients (Serves 4-6)

For the Filling:

  • 1 lb (450g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup (120ml) beef broth
  • 1 cup (120g) shredded cheddar cheese
  • 1 cup (120g) shredded Monterey Jack cheese

For the Enchiladas:

  • 8 small flour or corn tortillas
  • 2 cups (480ml) enchilada sauce (store-bought or homemade)
  • 1/2 cup (120ml) sour cream (optional for garnish)
  • Fresh cilantro or green onions for garnish (optional)

Instructions

1️⃣ Prepare the Beef Filling
In a large skillet, heat a bit of oil over medium heat. Add the onion and garlic, sautéing until soft. Add the ground beef, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Stir in the cumin, chili powder, paprika, salt, and pepper. Add the beef broth and let it simmer for 3-4 minutes until the liquid reduces slightly. Remove from heat.

2️⃣ Assemble the Enchiladas
Preheat the oven to 375°F (190°C). Lightly grease a baking dish. Warm the tortillas slightly in the microwave or on a skillet for easier rolling.
Spoon a generous amount of the beef mixture into each tortilla, sprinkle with shredded cheddar and Monterey Jack cheese, and roll tightly. Place the rolled tortillas seam-side down in the baking dish.

3️⃣ Top with Sauce and Cheese
Pour the enchilada sauce over the rolled tortillas, making sure they’re well-covered. Sprinkle the remaining cheese on top.

4️⃣ Bake
Bake for 20-25 minutes, or until the cheese is melted and bubbly.

5️⃣ Serve
