Ingredients (Serves 1-2)

  • 2 slices of bread (sourdough, whole grain, or your favorite)
  • 1 ripe avocado
  • 1 tbsp lemon juice
  • Salt & pepper, to taste
  • 1 tbsp olive oil or butter
  • 2 eggs (fried, poached, or soft-boiled)
  • Red pepper flakes (optional)
  • Cherry tomatoes or microgreens for garnish (optional)

Instructions

1️⃣ Toast the Bread
Lightly brush the bread with olive oil or butter, then toast until golden and crispy.

2️⃣ Prepare the Avocado Spread
Mash the avocado with lemon juice, salt, and pepper in a small bowl. Adjust seasoning to taste.

3️⃣ Cook the Eggs

  • For a fried egg, heat a little oil in a pan over medium heat and cook until whites are set but yolk is still runny.
